Who might be able to join this trial:
- You are between 18 and 64 years old
- You have been diagnosed with Long COVID, meaning you have had COVID-19 symptoms lasting 12 weeks or longer
- Your body weight falls within a normal range for your height (BMI between 18.5 and 25)
- Your iron levels are on the lower side, specifically a ferritin (iron storage protein) level below 25 ng/ml (confirm with trial site)

Who may not be able to join:
- You are underweight, or have lost more than 3 kg in the last month or more than 5 kg in the last three months
- You have had an eating disorder such as anorexia or bulimia in the past five years
- You have a mental health condition that would make it difficult to understand and agree to the study procedures
- You have a serious ongoing illness, such as significant kidney disease, or a long-term inflammatory condition other than Long COVID
- You are currently taking part in another clinical intervention study
- You follow a vegan diet or have done fasting in the last six months
- You are pregnant or breastfeeding
- You have, or are suspected to have, ME/CFS or early problems with your autonomic nervous system (the system that controls automatic body functions) (confirm with trial site)
- You have been diagnosed with inflammatory bowel disease, coeliac disease, or colorectal cancer
- You are taking anti-psychotic medication
- You have taken antibiotics at any point in the last 12 months
- You have recently started taking a new medication
- It would not be safe for you to have additional blood taken, for example if your haemoglobin (a measure of red blood cells) is below 10 (confirm with trial site)
