Who might be able to join this trial:
- People who have a medically confirmed diagnosis of Inflammatory Bowel Disease (IBD) or Rheumatoid Arthritis (RA)
- People who currently live in the continental United States
- People who are willing and able to follow specific dietary plans as part of the study
Who may not be able to join:
- People who are not able to give their own informed consent to participate
- People who have Type 1 or Type 2 Diabetes and are currently taking prescription medications for it, including insulin

- People with a history of strictures (narrowing of the intestine) or fistulas (abnormal connections between organs), for those with IBD

- People who are currently breastfeeding
- People who are taking medications that have not been approved by the FDA
- People who started a disease-modifying or biologic medication within the past 2 months
- People who are unable to complete a 3-week preparatory period before the main study begins, for any reason
- People who do not speak English
- People who have any form of organ failure or organ disease, including of the heart, liver, or kidneys
- People who have had a cancer diagnosis within the past year before enrolling
- People who have an allergy to red meat or to alpha-gal (a sugar molecule found in red meat that can trigger allergic reactions)
