Who may be able to join
Healthy Adults Group:
- Adults between 18 and 35 years old
- People who are generally healthy with no diagnosed long-term conditions, such as diabetes, heart disease, or digestive disorders

- People who have had a confirmed diagnosis of type 2 diabetes for at least one year before joining the study
- People who have been on stable medication for blood sugar, cholesterol, and/or blood pressure management for at least three months before joining
Who may not be able to join
Each point below is a reason the trial team may not be able to accept someone. It is not a list of requirements to meet.
Healthy Adults Group:
- People who have been diagnosed with type 1 or type 2 diabetes, heart disease, kidney or liver disease, or digestive conditions such as celiac disease or inflammatory bowel disease
- People whose fasting blood sugar or HbA1c levels fall outside the normal range specified above
- People who regularly take medications that affect blood sugar, insulin sensitivity, or digestion (such as metformin, steroids, or GLP-1 medications)
- People who have an allergy or intolerance to wheat, chickpeas, gluten, or other ingredients used in the study foods
- Women who are pregnant, breastfeeding, or planning to become pregnant during the study period
- People who have had a significant change in body weight (more than 5% of total body weight) in the past three months
- Competitive athletes or people following extreme exercise routines, as these could affect blood sugar results
- People who are unable or unwilling to follow the study procedures, including glucose monitoring and eating the set study meals
Type 2 Diabetes Group:
- People who have hormone-related, heart, lung, kidney, or digestive conditions that could affect the study results
- People who have a sensitivity, intolerance, or allergy to any ingredients in the study breads
- Women who are pregnant or breastfeeding
- People who have a diagnosed eating disorder
- People taking medications or dietary supplements that the study team considers incompatible with the study (confirm with trial site)

Postprandial incremental blood glucose area under the curve (iAUC₀-₁₈₀ min), measured by continuous glucose monitoring, after consumption of the bread enriched with 30% larger particle size compared with white wheat bread.
